Victoria Sponge Cake...


Ingredients:


For Cake


All purpose flour/maida - 100 gms
Sugar - 100 gms
Butter (Amul) - 100 gms
Baking powder - 1/2 tsp, heaped
Vanilla essence - 1 tsp
Eggs - 2 large or 3 medium
Milk - 3 tbsp, warm

For layering and decorating:


Strawberry jam - store bought, as required
Butter cream icing - store bought, as required
Icing sugar - store bought, as required

Method:

Grease the baking pan and preheat the oven at 180 degrees for 20 minutes
Cream butter and sugar till pale in color
Whisk the egg till it becomes light and fluffy
In a mixing bowl, sieve maida and baking powder
Add in the butter sugar mixture and mix
Add in the egg and fold with a spatula
Add in vanilla essence and milk. Mix well
Pour the batter in the greased pan and level it with the spatula giving a little dent in the center
Bake at 180 degrees for 15- 20 minutes
To check whether the cake is done insert the tooth pick in the center of the cake. If it comes out clean then its done
Cool the cake for 10 minutes in the baking pan and then remove and place it on a wire rack to cool it completely
Cut it horizontally into two equal parts
Spread the butter cream on top of one of the sponges and then apply a thin layer of strawberry jam all over
Place the 2nd sponge cake over it like a sandwich and dust with icing sugar
Slice and serve!!!
