banana oat pancakes
Ingredients
- 3 cups flour
- 1 1/2 cups old-fashioned oats
- 1/4 cup sugar
- 1 tbsp baking powder
- 2 tsp cinnamon
- 2 tbsp ground flaxseed
- 1/2 tsp salt
- 2 large eggs
- 3/4 cup milk
- 1/2 cup water
- 2 cups mashed ripe banana
- 1/4 cup coconut oil (liquid form)
Instructions
- Combine flour, oats, sugar, baking powder, cinnamon, flaxseed and salt in a large bowl. In a separate bowl mix together egg, milk, water, and oil. Gently stir wet ingredients into dry and combine until just incorporated. Add in banana's and stir until combined.
- Using a 1/4 cup measuring cup, pour batter onto a heated griddle. When bubbles form around edges of pancakes, flip. Serve immediately.
