Lemon And Lime Syrup Cake...
Ingredients:
self raising flour 2 cups
baking powder 1 tsp
4 eggs beaten
butter 1 cup softened
superfine sugar 1 cup
lemon juice 2 tbsp
grated rind of 2 lemons
FOR THE SYRUP:
juice of 1 lime
150 gms. (2/3 cup) super fine sugar

FOR THE SYRUP:
juice of 1 lime
150 gms. (2/3 cup) super fine sugar
Method:
sieve flour and baking powder in a bowl.
Now take a bowl and put beaten eggs, butter, sugar, flour and beat together well until the mixture is creamy, fluffy and smooth.
now add lemon juice and lemon rind, mix well and pour the mixture into the prepared baking tin, slam 2-3 times against the worktop.
Bake in a preheated oven on 180 degree for 30-40 minutes or till done (golden on top and spongy)
In a sauce pan put sugar,lemon juice, 1 tbsp water,cook and stir on low heat, make a thin sugar syrup and pour over the hot cake, let it cool on room temp. and serve!
