Chocolate Mini Donuts with Rocky Road Toppings

Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 2 large eggs, beaten
  • 2 teaspoons vanilla extract
  • ¼ cup applesauce, unsweetened
  • 2 tablespoons oil (canola, vegetable or coconut)
  • For the Coating
  • 1 cup chocolate chips, melted
  • For the Topping (optional)
  • mini marshmallows
  • chopped walnuts
Instructions
  1. Preheat oven to 325 degrees. Lightly grease donut pan or mini muffin pan. Set aside.
  2. In a large bowl mix together flour, sugar, cocoa, baking powder, and salt.
  3. In a separate bowl, stir milk, eggs, vanilla, applesauce, and oil together. Pour into dry ingredients and mix until blended. Don’t over mix.
  4. Using a pastry bag or plastic sandwich bag, pipe dough into prepared pan. Bake 8-10 minutes. Allow to cool for about 5 minutes before removing the donuts from the pan.
  5. Dip each donut or mini muffin into the melted chocolate. Let harden or top with marshmallows and nuts.
