Malpua With Khurchan Rabdi


Ingredients:

khoya 1/2 cup
sooji 1 tbsp
maida 1 tbsp
green cardamoms powder 1/4 tsp
milk as required
ghee for frying

Method:

 Mix slightly roasted sooji, maida, khoya,cardamoms powder with milk well and leave no lumps.
Now heat a frying pan, grease with ghee and pour a serving spoon full of batter on it.
Spread it in the round shape and fry evenly from both the sides.
Keep aside the malpua.
Make 2 strings (2 taar ki chaashni) sugar syrup and dip malpua in hot sugar syrup.

How to make Khurchan Rabdi...
Milk (full cream) : 1 litre
Chuna water 1/2 tsp
Sugar : 1/2 cup (less or more)
Cardamom Powder : 1/4 tsp

Method: 
Take a broad and heavy bottomed pan and pour milk in the pan.
Keep the flames low/ medium and bring it to boil first.
When the milk is boiled once,add chuna water, keep a serving spoon in the bowl so that milk does not overflow. Keep stirring the milk so that the cream does not collect on the spoon.
Keep stirring until the milk is reduced to 1/4 of the original measurement.
Add sugar, cardamom powder
Keep the flames low and stir until the liquid left by sugar is disappeared. keep stirring until it looks like rabdi's khurchan.
serve chilled or on room temp. with warm malpuas (with nuts garnishing)

Use1/2 tsp chuna's water(Limestone) If available! If it is not available leave it .
plz use only chuna's water not the chuna (which we get from paan wala's shops)
(The only reason of using chuna's water here to get the better flakes in rabdi)
