Gajar Paneer Halwa...


Ingredients:


1 k.g. lightly scraped and grated carrots
10-12 cashew nuts, halved 
2-3 tbsp desi ghee or unsalted butter
1-1/2 cups skimmed milk
½ tsp green cardamom powder
200-300 gms. grated paneer
3/4 cup sugar(less or more)
chopped nuts as required



Method







Heat ghee in a thick-bottomed pan and add the cashew nuts fry them slightly and remove from the pan. Now add the grated carrots and sauté for a few minutes. Add milk and cook on medium heat for about 10-15 minutes or until the milk evaporates and the carrots are cooked. Stir from time to time.
Stir in the grated paneer and sugar and cook for two to three minutes or till the sugar melts and mixes well, let it's water dry,stirring continuously.

Add the green cardamom powder chopped nuts,serve hot.
