Mushroom and spinach lasagne...


Ingredients:


4 tbsp olive oil
3 garlic clove, crushed
2 cups of mushrooms, sliced
1 tsp basil leaves, chopped (optional)
2 cups of blanched spinach
1 medium size onion sliced
1 cup of tomato paste
1 medium tomato sliced
3 cups of white sauce
4 tbsp grated parmesan
2 tsp mozzarella cheese (optional)
Boiled lasagne sheets
Salt, pepper and red chili flakes as desired


Method


Preheat oven to 200C/180C.
Heat the oil in a large frying pan, add the garlic and cook for 1 min. Add the mushrooms and basil, then cook for 3 mins until they start to soften. Throw in sliced onion, sauté for a while now add spinach and stir for few minutes now add tomato and tomato paste until the heat of the pan wilts the leaves add salt pepper and chili flakes. Remove from the heat.
Layering:
Spray some butter in an oven tray add a layer of lasagne sheets now add a layer of spinach mix over it. Top with few spoons of white sauce and Parmesan cheese. Now add another layer of lasagne sheet and then spinach mixture and repeat with a white sauce and sprinkle over the rest of the Parmesan, how add a final layer of lasagne sheets top with white sauce, some mozzarella cheese and sprinkle Parmesan cheese add some olive oil too. Then bake for 35 mins until golden and the pasta is tender.
