Nankhatai.


Ingredients

2 katori/small bowl maida
1 katori/small bowl sooji
1/2 katori/small bowl besan
About 11/2 to 2 katori/small bowl ghee (semi solid) or as much needed to make the dough come together using absolutely no water...the quantity might vary slightly!
1 1/2 katori/small bowl sugar (powdered)
Elaichi powder
Pistachios (coarsely Pounded)

Method: 


Make a dough of maida, sooji, besan, sugar and ghee! Do not over work the dough. Wrap in plastic wrap and refrigerate for 20 minutes. Now make small flat balls/ Pedas and place on cookie sheet. Using a knife, cut a cross in the middle of each. Press some elaichi powder and pistachios in the middle. Rest the Pedas in the refrigerator for another 15 minutes. Bake in a 375 degree oven for about 15 minutes. Cool on a wire rack and then store in an air tight container!
