Chinese Spring Rolls...



Ingredients:


For making roll you will need:
2 cups all-purpose flour (maida)
1/2 tsp salt
1 tbsp ghee/oil
1 egg
Water to knead
For the stuffing you will need:
1 cup cabbage shredded
1 cup carrot grated
1 cup mushrooms (rinsed and finely
chopped) (optional)
1 cup leeks shredded
1 tsp ginger paste
1/2 tsp minced garlic
3 green chillies chopped
1/2 cup sprouted beans
1 tbsp dark soya sauce
1/2 tsp vinegar
1/2 tsp white pepper powder
Salt to taste
Oil for frying
1/2 cup cornstarch (Mix a tsp of cornflour in
1/2 cup of water)


How to make Spring roll :


1. Sift the flour and add salt, egg and water
and make a smooth batter.
2. Heat 2 tbsp of oil in a flat non-stick pan
and add enough batter so that it covers the
base of the pan.
3. Cook from both sides of the pancake until
looks golden.
4. Repeat the same till whole batter is
utilized.
5. For making the filling, heat 2-3 tbsp oil in a
wok and add ginger, garlic and green
chillies.
6. Saute over medium high flame for 2 minutes and then add mushrooms.
7. Stir fry for 10-15 seconds.
8. Add shredded leeks and stir fry for few more
seconds.
9. Now add carrots, cabbage and season with
salt and pepper powder.
10. Cook by tossing the vegetables until they
are crisp and tender.
11. Add the bean sprouts, soya sauce and
vinegar.
12. Cook over medium flame by stirring for 2-3
minutes.
13. Set aside the prepared filling to cool.
14. For the final proceeding, place 2-3 tbsp. of
the filling on the center of each pancake.
15. Fold from the sides and form a tight roll by
sealing the edge with the help of
cornstarch.
16. Deep fry in hot oil until turns to golden in
color.
17. Serve delicious Chinese spring roll with hot
sauce or Schezwan sauce.
